Frequently Asked Questions
Our coffee
Where does your coffee come from?
All of our coffee comes from Brazil, from family farms in the state of Minas Gerais. Café Alves Lima Especial is grown by the Alves Lima family, who have farmed coffee since 1925. PFC Perfect Classic Roast is a single-origin microlot from Mantiqueira de Minas.
What do "84+" and "82+ points" mean?
Specialty coffee is cupped and scored on the Specialty Coffee Association (SCA) 100-point scale, and coffees that score 80 points or more are classified as specialty grade. Café Alves Lima Especial is scored 84+ points and PFC Perfect Classic Roast is scored 82+ points.
Is your coffee 100% Arabica?
Yes. Both Café Alves Lima Especial and PFC Perfect Classic Roast are 100% Arabica.
What roast levels do you offer?
Café Alves Lima Especial is a Medium Light Roast. PFC Perfect Classic Roast is a medium roast (our Classic Roast), developed for clarity and balance.
What do the coffees taste like?
Café Alves Lima Especial: chocolate, sweet, velvety and balanced, with an intense aroma, full body and mild acidity. PFC Perfect Classic Roast: chocolate, caramel and brown sugar, with a rich aroma, medium body and a lively acidity.
What is Certifica Minas?
Café Alves Lima Especial is certified under the Certifica Minas Café program for quality and traceability.
Grinding, brewing and storage
Is the coffee whole bean or ground?
Both coffees on our site are sold as roasted whole bean coffee. Grinding right before you brew keeps the most aroma and flavor in the cup.
How fine should I grind?
As a general guide: fine for espresso, fine-to-medium for a moka pot, medium-fine for pour-over, medium for drip coffee makers, and coarse for French press. Adjust finer if your coffee tastes sour or weak, and coarser if it tastes bitter or harsh.
Which brewing methods work best?
Café Alves Lima Especial is recommended for drip coffee makers, French press, paper-filter pour-over and moka pot. PFC Perfect Classic Roast is recommended for espresso, pour-over, French press and drip coffee makers.
How should I store my coffee?
Keep the bag closed in a cool, dry place, away from light. Both coffees come in high-barrier bags that help preserve aroma and flavor.
